Farmer’s markets are often great places to shop for one. Frequently, you can bag your own portion of beans, apples, lettuce, or brussels sprouts. Being able to selection your portions makes it easy both to buy a variety of food and to avoid wasting food. And, of course, it’s generally wonderfully fresh delicious produce. As an example, I am eating sweet, crunchy carrots purchased from the farmer’s market as I write this post.

Preparing a few items to eat for snacks, breakfast or lunch for the upcoming week is a great way to help ensure you eat a healthy diet.  Even just slicing carrots and washing plums can make a difference during a busy week.  Packing up healthy food beforehand switches your default from the vending machine or pizza shop to healthy foods focusing on whole grains, fruits, and vegetables.

What’s on my plate for this week?

  • Hardboiled eggs (breakfast and/or snacks)
  • Blanched green beans (snacks and/or lunch)
  • Carrot sticks (snacks and/or lunch)
  • Multigrain Pilaf with Lentils (lunches)
  • Yellow plums

What are you favorite items to make ahead in the summer?

Do you know anyone who is single?  Anyone who eats alone regularly? 

 

Do you know anyone who eats cereal, or toast, or a frozen burrito instead a full meal because it’s a pain to cook for one?

 

That’s why.  Because cooking for yourself is worth it, but only if your meal is healthy and satisfying.
