Simple Healthy Recipes for One

Preparing a few items to eat for snacks, breakfast or lunch for the upcoming week is a great way to help ensure you eat a healthy diet.  Even just slicing carrots and washing plums can make a difference during a busy week.  Packing up healthy food beforehand switches your default from the vending machine or pizza shop to healthy foods focusing on whole grains, fruits, and vegetables.

What’s on my plate for this week?

  • Hardboiled eggs (breakfast and/or snacks)
  • Blanched green beans (snacks and/or lunch)
  • Carrot sticks (snacks and/or lunch)
  • Multigrain Pilaf with Lentils (lunches)
  • Yellow plums
